I blanched them for 5 or 6 minutes and then put them in ice water.
Then I dried them off and sauteed in garlic and olive oil with a little red pepper. They were fucking fantastic.....you can cook them much longer than other greens without them getting all mushy so they took on a lot of flavor. The only thing I'd do differently is to cut them into thin ribbons...the larger pieces tended to stick together. |
