He's saying that he believes (as many Biblical scholars do) that some of the practices that the Bibles discourages (like gay sex, touching pig skin, etc.)
were sanitary concerns, not spiritual concerns. In modern days many of those concerns are irrelevant and outdated, but at the time the Bible was assembled,
these practices were major health hazards.
