it is super easy to cut the avacado in your hand.
I don't peel mine. I cut them in half, separate it, gently pry out the pit, then slice it length wise and across several times and use a spoon to scoop it out. If the avacado is ripe enough, it just falls right out of the skin. i want some guac now. |

and notice I said "cut softly". I'm not talking chopping. arctic is right, avacados are soft enough it's easy to cut them in your hand. sure, you can use a cutting board, but that's just something else to wash. remember the rule, keep it simple, keep it cheap. eta -- if you have to pry, your avacado is not ripe enough. |

involved in the scooping. Spoons are perfect if the avocado is ripe. Can use the spoon or a knife to gently scrape any brown spots off what you've scooped
out.

more than anything, I love those buttery haas avacodos from florida. they're giant and really rich with a light green smooth skin. when I can get them
here, they're about $1.59 each. I buy the haas just to scoop out of the skin and eat. you don't need to add a thing to them.

We usually chop up fresh jalapeno and add that, too. I've never tried pickled jalapenos in guac, but I don't like pickled jalapenos anyway, so I
probably won't ever.

A pastry blender makes the best textured guacamole. Surely you remember those from the days when people made their own pie crusts.
I also use mine for egg salad. |

I use a coarse whisk to mash mine
and a pure one is just avocado, salt, pepper and a dah of lime or lemon jiuce sometimes, though, I get a yen for something creamy and will add some dour cream, but then I don't call it guacamole - it's a guacamole dip then and I'll usually add diced green chilies (preferably Hatch) and I like the coarse knobby skinned ones |

I bought avocados to make guac two nights ago. Cut them open and they were not only rotten, but MOULDY around the pit. They felt right from the outside, but
something horribly wrong happened on the inside.
I've never seen an avocado grow ... is it a tree or bush? |

zomg! That was some filling nachos - I'm stuffed! There wasn't a lot of chips but I heaped on the toppings and guac. I can barely move. I made the
guacamole a little too hot, a bit too much pepper sauce - but it was till awesome.
Sometimes avocados are 3 / $1 in the the city at the big box grocery store, but I paid a little over $3 for this one (small grocery store). |
