I thought the same this year and the last time they did the same thing (was it last season)? Defining ingredients, cutting and chopping, scaling fish are all things I think a Top Chef should know. I can deal with those challenges, even when I would prefer a real cooking quickfire, because it fits the role. I do NOT see how copying a dish fits the role of a top chef.It's not about copying it's about your palate and how well you can identify exactly what all the ingredients are in a dish.
