I've decided to go with my own dish using some big ol' Portobello mushrooms. The plan is to sautee them in oleo and red wine, then serve with a topping of carmelized onions, garlic, Bell peppers, carrots, and black beans. Combined with the regular sides, that should about cover it, eh?
