Exactly. It was vegetarian, not vegan, and they could have used creams and cheese, certainly more legumes for proteins.

Heck, stuff something meaty feeling like the eggplant or portabellos, or hell,even and updated chili relleno or ramekin of any number of things. A macaroni and cheese with exotic cheeses...something other than veggies on a plate! Using a red pepper as a shell for color and adding any decent stuffing to it with mushrooms sauted in garlic/spices as the "meat."

That was, for the most part, boring ass food, and no, vegetarian doesn't have to be boring (this from a meat eater!)

I actually loved the idea of stuffing the squash blossom idea, but obviously, the choice of stuffing should have been better.

ETA I was also surprised that no one tried something like Thai inspired food, and while I understand avoiding the go-to pastas, they could have made a lovely presentation with a stuffed manicotti shell, meaty mushrooms, or elegant cheeses and flair it up. So many options...I also thought those tiny eggplants would have been perfect as pretty little stuffed eggplant.
