Fontina's creamier than jarlsberg (not in a brie way or anything, though), so it melts super well. Plus it tastes better! I would recommend fontina for all your cheese needs. I just googled it, and apparently there's more than one kind. I've only ever had Danish fontina - perhaps Italian is good too?
